  • 94% Viognier & 6% Sauvignon Blanc
    Viognier spent eight days on the skins followed by primary fermentation and full malolactic conversion in stainless steel. Sauvignon Blanc underwent a cool primary fermentation in tank followed by brief aging.

  • Decadent aromas candied orange peel, honey mead and chamomile that lead to surprisingly tense, gently structured citrus flavors (think kumquat) with a sneaky herbal quality of lemon thyme. Super high energy with focus and general deliciousness.

  • Silly versatile - try this with arugula salads, hard aged cheeses, cream sauces, french onion soup, all the shrooms.

chapter one. chillable red

  • 60% Petite Sirah, 33% Zinfandel, 7% Syrah
    Chapter One Chillable Red was picked in stages at low Brix and cofermented carbonically for 18 days. As desired ripeness was reached in the vineyard the grapes were added to the existing fermentation and aged entirely in stainless steel without a lick of oak to bring you that lip-smacking juiciness.

  • Vibrant, crunchy red fruits like cherry, strawberry, and cranberry, along with hints of violet, thyme, and black pepper. Light-bodied and best served slightly chilled, the wine is high-energy, focused, and simply delicious.

  • Enjoy it on its own or pair it with grilled vegetables, savory and spicy white meats, particularly for an al fresco dining experience.
